Is an adventure or a full-face helmet better for my GS?
It depends on your use. If you only ride on the road, a full-face helmet is quieter and more stable on the highway. If you also plan off-road or dirt road riding, an adventure helmet allows for better breathing under exertion and protects from direct sun thanks to the peak. Many GS owners have one of each.
Can the peak be removed?
Yes, on many modern adventure helmets, and they effectively become full-face helmets. On 3-in-1 models, you can also remove the visor for a pure motocross configuration. Check the product sheet for the modularity of the helmet you're interested in and the parts included in the package.
Can I use an adventure helmet with motocross goggles?
